A cast-iron burner is porous metal: it absorbs grease and rusts from moisture, such as steam from pots, a wet cloth or the humid air by the Caspian Sea. We remove burnt-on residue and surface rust, and the protective coating seals the pores and slows down new buildup. If the cast iron is cracked, the burner is warped or it no longer heats, that is not a cleaning job but a replacement at a service center.

Glass-ceramic is smooth and does not rust, but it does not forgive sugar and abrasives.
